Made every year at Christmas and topped on the Christmas pudding, brandy butter also goes perfectly well with mince pies. Use the best Brandy you can find, as any harshness can make it through to the butter. Keep tasting when adding Brandy, every year it curdled using my mother's brandy measurements... so we've added steps to bring it back.
