This is an easy curry we've cooked before from Delish. I've reprocessed it for Yes Chef!: There are TONS of chicken curry recipes in the world. From south India to Thailand to Jamaica, no two are exactly the same. This version might be a little untraditional, but it’s still pretty darn tasty. Here I’m simmering chunks of chicken in a lightly spiced coconut sauce till they’re tender and cooked through, and then ladling that creamy sauce over freshly cooked rice. Hungry? Yeah, I am too.
