This is a foolproof custard recipe — the only real decision is how runny you like it. There are plenty of questionable custard recipes online, but a reliable rule of thumb is one large egg yolk per 100ml of milk. For a richer, thicker result, swap the milk for double cream. Once it’s cool enough, pop it in the fridge to speed things up.
